Our deep-dish apple pie, step by step

The bakery’s most-asked-for recipe: which apples to use, how thin to slice them, and why we bake it low and slow.

A deep-dish apple pie with a lattice crust

Every autumn someone asks for the recipe. Here it is.

The apples

Use a mix: Northern Spy for structure, Cortland for softness.

The method

  1. Slice the apples thin, about 5 mm.

  2. Toss with sugar, cinnamon and a little flour.

  3. Bake at 190 °C for 20 minutes, then 170 °C for 50.

Let it cool for two hours. It slices cleanly and the juices set.
