The first frost and the sweetest Honeycrisp

A cold night last week turned the orchard silver, and the Honeycrisp came in sweeter for it. Here is why frost helps, and what is left to pick.

Red Empire apples piled in a wooden crate

We woke on Tuesday to a white orchard. A light frost does apples no harm once they are nearly ripe; it pushes a little more starch to sugar.

What is still on the trees

  • Honeycrisp: the last two rows, by the pond

  • Empire: plenty, crisp and tart

  • Northern Spy: for pies, from next week

Picking runs every weekend while the late apples hang. See Hours & directions before you come.
